Dondurma (or Maraş ice cream) is a Turkish mastic ice cream. It is similar to the Syrian dessert booza. Dondurma typically includes the ingredients cream, whipped cream, salep (ground-up tuber of an orchid), mastic (plant resin), and sugar. It is believed to originate from the city and region of Maraş and hence also known as Maraş ice cream.
Turkish Ice Cream has an elastic texture and a unique flavor thanks to salep, which is the powder of orchid bulbs. Although it has the flavor of salep, it is known as plain ice cream – sade dondurma in the country and nobody calls it salep ice cream.

This stretchy stickiness is thanks to the inclusion of an aromatic resin called mastic.

Traditional Turkish ice cream is chewy, thick and has an elastic texture. This result stems from two of the main ingredients that are a thickening agent called salep and a resin called mastic. It also has a marvellous resistance to melting and on hot summer days, it is consumed slowly without a fear of it dribbling down the cone.
